This unique Japanese barbecue sauce has been developed by Yamakawa Jozo, a soy sauce brewer from Gifu prefecture. Gifu is known for loving barbecue, and is said to be the number one prefecture in Japan for barbecue sales!
The base of the product is their special tamari shoyu, made with only carefully selected domestic soybeans, salt, and koji to ensure the best taste possible.
The tamari is then blended with miso paste which has been carefully brewed and aged in wooden barrels. To round out the flavor profile, Gifu's special Fuyu persimmons have been added for sweetness, and sudachi citrus for acidity.
